    Heat oven to 220°C / 425°F and put a baking tray in to heat.

    Rub the butter into the flour, salt and baking powder until like breadcrumbs. Stir in sugar.

    Warm the milk with vanilla and lemon, then cut it into the flour with a knife. Don't overwork.

  4. 4

    Pat out 4 cm thick and stamp out rounds with a floured cutter — straight down, no twisting.

  5. 5

    Glaze the tops and bake 10–12 minutes until risen and golden.
