Pozole rojo

    Simmer pork with half the onion and the garlic head for 2 hours, skimming.

    Soak seeded chiles in hot water, blend with a garlic clove and some broth, and strain into the pot.

  3. 3

    Add hominy and oregano and simmer 30 more minutes. Season well.

  4. 4

    Serve in big bowls and let everyone add cabbage, radish, lime and oregano.
